  • 175g wholemeal self-raising flour
  • 1 teaspoon baking powder
  • 2 teaspoons mixed spice
  • pinch of salt
  • 150ml (1/4 pint) sunflower oil
  • 175g soft light brown sugar
  • 3 medium eggs
  • 100g rasins or currants
  • 250g carrots, peeled and grated
  • Topping
  • 200g cream cheese
  • few drops vanilla extract
  • 3 to 4 tablespoons icing sugar

  1. Preheat the oven to 180 C / Gas 4. Prepare a 1kg (2lb) loaf tin, buttered and lined with a strip of baking parchment.
  2. To make the carrot cake: Tip the flour into a bowl and stir in the baking powder, spice and salt.
  3. Then stir in all the remaining ingredients until well mixed. Pour the mixture into the prepared tin.
  4. Bake in the centre of the oven until it is firm to the touch (a skewer should come out clean after being inserted into the middle).
  5. Remove from the oven and leave in the tin for 10 minutes, then turn out on to a wire rack and leave to cool completely.
  6. To make the topping - Beat together the cream cheese and vanilla extract. Add icing sugar to taste.
  7. Spread onto the cake with a spatula or cut the loaf in half and use the topping as a filling.

lovely moist cake. Also try using just cinnamon instead of mixed spice and add grated orange rind and pecans or walnuts in place of sultanas/raisins. Use an orange glaze whilst still warm for an everyday, lower fat cake and use cream cheese icing for special days. Altogether yummy.-12 Feb 2013

For me, I found this was too spicy in relation to other carrot cake recipes. My kids love catrot cake but they wasn't too sure.Like others, I think just a little cinnamon or just one teaspoon of mixed spice would be more than enough.-22 Dec 2014

Recipe Summary

Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9x5 inch loaf pans.

Sift together baking soda, salt, spices, and flour.

In a large bowl, combine ground carrots, pineapple, oil, and sugar. Mix in eggs. Blend flour mixture into carrot mixture. Mix well. Fold nuts and raisins into batter. Pour into prepared pans.

Bake at 375 degrees F (190 degrees C)for 45 minutes, or until a toothpick inserted into bread comes out clean.


Preparation

For the cake:

Preheat the oven to 350°F. Line a square, 8- by 8-inch pan or a 9-inch cake pan with parchment paper.

In a large bowl, whisk the eggs and vegetable oil until combined. Add the milk, sugar, vanilla and salt and whisk until combined. Sift in the flour, baking soda, baking powder and cinnamon. Stir or fold until combined. Add the carrots, nuts and raisins (if using) and stir or fold until combined.

Pour the batter into the cake pan and bake until your house smells like carrot cake, and a toothpick inserted into the center comes out clean, about 35-40 minutes. Remove from the oven and let cool on a cooling rack.

For the frosting:

Add the softened cream cheese to a large bowl and whisk it (if the cream cheese isn't softened, zap it in the microwave for 10-20 seconds).

Add the powdered sugar, milk, vanilla and salt and whisk until smooth. If it's a little too thick, add a tiny bit more milk.

To assemble:

Once your cake has cooled (if it's too hot, it will melt the frosting), spread the frosting on in an even layer.

A lot of carrot cake recipes contain nuts, usually walnuts. Walnuts would be fine to use in this recipe, I just personally prefer pecans! You&rsquoll find pecans in some of my other recipes too, like my Hummingbird Muffins and Blueberry Nut Muffins.

However, if you&rsquore not a fan of nuts or have an allergy, you can leave them out. Or, why not substitute in the same amount of raisins, seeds or some shredded coconut?

Vegetable oil - I always make this loaf with vegetable oil and I do recommend it, as years of making this loaf has proven it works perfectly. Other oils, such as canola oil or Sunflower may work, though I haven't tested them myself. Olive oil wouldn't be recommended as it will introduce a flavour to the loaf. Finally, butter, either room temperature or melted, may possibly work, but I have not tested it and I would expect that it would change the texture and shelf-life of this loaf.

I know that we tend to think of cooking oil as generally interchangeable, but the type of oil used can make a different in baking recipes like this one. For guaranteed success, use the recommended oil.

Carrots - Of course, it wouldn't be a carrot cake without carrots :) While any carrot will do, I do like to pick up some fresh, organic carrots if I can, for best flavour.

White sugar - sugar in baking recipes perform more of a role than just sweetening. It contributes both to the texture and moistness of the finished loaf. While it may be possible to reduce the sugar successfully, it generally comes at some cost to the quality of the finished loaf. I always recommend using the specified amount of sugar first, and then, if desired, slightly reduce in subsequent bakes, until you find the sweet spot for you.

Walnuts - Nuts are optional in this cake, but do offer some nice flavour and texture to the loaf. I generally use walnuts, but pecans would work nicely as well.

If you don't want to use nuts, but the idea of raisins or coconut appeals to you, you could add 1 cup of either, in place of the nuts.

Cream cheese - You can use either full-fat or fat-reduced cream cheese here, though you may find you need less confectioners' sugar with the reduced fat cream cheese, so keep that in mind when mixing the icing.

  • Make the Cream Cheese Maple Frosting - The Maple cream cheese frosting is super easy to make - either combine everything by hand or use an electric mixer. Spread it on the top and you are good to go!

Yes, absolutely ! Just another bonus that you can freeze the cake (as above, with cling wrap, no frosting) and the cake will last for two to three months.

And the smell whilst baking, and after, is absolutely divine. Cinnamon and Nutmeg is always a great combination.

You can also use any icing/frosting on the cake loaf. Even store-bought, ready-to-use is fine. That is because the cake takes the show and not the topping.

Also, use any decorations you wish. My granddaughter helped me bake the cake and she decided (just about the whole loaf) should be covered in the mini fondant carrots.
