1. Preheat oven to 400 degrees. Place sliced baguette on large rimmed baking sheet and drizzle with olive oil.

2. Sprinkle with salt and bake, until golden brown and crisp, about 10 minutes, flipping halfway through baking. Set aside.

3. Meanwhile, cook bacon in a large non-stick skillet over medium heat until fat is rendered and bacon is crisp, 12 to 15 minutes.

4. Using slotted spoon, remove from pan and drain on paper towel lined plate.

5. In small, non-reactive saucepan, simmer 1 cup of balsamic vinegar and 3 tablespoons sugar over medium heat until reduced by half and balsamic is thick and syrupy, 15 to 20 minutes. Set aside to cool.

6. To assemble, spread toasted bread with 1 ½ teaspoons goat cheese, top with diced mango, sprinkle with cooked bacon, and drizzle with cooled balsamic syrup. Top with sliced green onions.


Bacon Goat Cheese Guacamole

In a large bowl, mash together avocado, jalapeno pepper, onion, cilantro, lime juice, salt and pepper. Taste and season additionally if desired.

Stir in almost all of the bacon, then stir in the goat cheese. Scoop the guac into a bowl to serve and top with the remaining bacon for garnish. Serve immediately with tortilla chips.

This here is the best of both worlds: bacon and guac! Bacon in guac! It&rsquos dreamy. Not only is the flavor out of this world, but the crunchy texture gives you a bite of exactly what you need.

The goat cheese does exactly the same with its signature creamy tanginess. I&rsquod been hesitant about putting goat cheese in guac. I wasn&rsquot sure if the texture would hold up, if it would lose its flavor in a mound of cilantro and lime. But it&rsquos super lovely, and when you bite that chip and get a burst of avocado with a hunt of creamy cheese &hellip aaah. You will want ten thousand more bites.


Recipe Summary

Stir together shredded mangoes, sugar, and salt in a large saucepan until sugar is moistened let stand until mangoes release juices, about 10 minutes. Bring to a boil over medium-high, stirring occasionally. Reduce heat to medium, and simmer, stirring occasionally, until most of the liquid evaporates and mango mixture is loosely glazed, 12 to 15 minutes. Remove from heat stir in cinnamon stick, chile powder, and cardamom. Spoon mixture into a clean lidded glass jar secure lid. Let cool completely at room temperature, about 4 hours.

Preheat oven to 400°F with racks in upper and lower third positions. Arrange baguette slices evenly on 2 baking sheets brush with melted ghee. Bake in preheated oven until crisp and light golden, 10 to 15 minutes, rotating baking sheets between top and bottom racks halfway through bake time. Let cool 5 minutes. Spread about 2 teaspoons goat cheese onto each toast top each with about 2 teaspoons chhundo. Sprinkle assembled crostini with edible flower petals, if desired.

Spring has finally arrived! Yes, the temperatures are warming up, the sun is shining and flowers are blooming. But it’s the appearance of ramps at local farmers markets that truly marks the season for culinary enthusiasts.

“What the heck are ramps?” you ask? A member of the onion family, they’re one of the earliest spring greens with a potent flavor that’s a cross between garlic and onions with a slightly peppery bite.

Ramps are high in vitamins A and C. They are wild foraged, have a long growth cycle and a very short window of availability making them a more expensive and highly coveted ingredient.

Intrigued? Intimidated? Here are a couple of tips and recipes to get you started.

Purchasing: Ramps are sold in bunches. They have slim white ends resembling a scallion but broad green leaves and an unmistakable garlic aroma. Look for bright greens and pass on bunches with wilted leaves.

Storage: Handle with care! If you’re not going to use your ramps right away then store them in the refrigerator for 3-4 days wrapped in a paper towel and placed in a plastic bag.

Cooking: Ramps are entirely edible from top to bottom. You can sauté them whole and eat them as a side dish, or chop them up for use in place of scallions, leeks or spring onions in any recipe. They tend to be dirty like leeks. So be sure to rinse thoroughly and pat dry before use.

Goat Cheese and Caramelized Ramp Crostini

Use this process to caramelize ramps for any use. But they’re particularly delicious in this crostini application.

INGREDIENTS

1 bunch ramps, cleaned and chopped
1 Tbsp butter
1 Tbsp balsamic vinegar
1 Tbsp parsley, chopped and divided
1 baguette, sliced and toasted
8 oz goat cheese

HOW TO

  1. Melt butter in a large sauté pan over medium heat. Stir in ramps. Reduce heat to low and cook, stirring frequently until the ramps take on a caramel-like color, about 20-30 minutes.
  2. Deglaze with balsamic vinegar. Stir in half of the parsley and season to taste with salt and pepper.
  3. Meanwhile, spread goat cheese on toasted baguette slices. Top with warm caramelized onions. Garnish with remaining parsley and serve.

Cilantro-Mint Yogurt Sauce

A refreshing spring condiment.

INGREDIENTS

¼ cup cilantro
¼ cup mint
1 ramp
1 cup spring greens (e.g. spinach or kale)
1 Tbsp lime juice
1 Tbsp coconut oil, melted
1 cup Greek yogurt
Salt and pepper to taste

HOW TO

Place cilantro, mint, ramp and greens in food processor or blender and pulse until minced. Add lime juice, oil and yogurt and blend until well mixed. Season to taste with salt and pepper. Chill for at least 2 hours and up to 2 days. Serve over grilled fish or chicken. Try it as a dip for spring veggies.

Ingredients

  • 10 slices Hatfield Maple Brown Sugar Extra Thick Cut Triple Smoked Bacon
  • 2 tbsp olive oil
  • 2 tbsp . butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • ¾ c. fresh cranberries
  • 3 ½ tbsp . Light brown sugar
  • ¼ c. cranberry juice
  • 1 tsp . Red wine vinegar
  • 2 tbsp . Dried cranberries
  • 8 oz . Creamy goat cheese
  • 8 baguette slices

Instructions

  1. Preheat oven to 350 Degrees: Place only-ins doubleReplace replaceWithoutSep&rdquo data-gr-id=&rdquo144&Prime>cooling rack on large baking sheet or line with aluminum foil. Place the bacon slices on the cooling rack or baking sheet. Place in oven and allow to cook until golden, about 10-15 minutes. Remove from oven and allow to cool. Once cooled, chop the bacon in small pieces.
  2. In a medium sauté pan on medium heat, add the olive oil and butter. Once butter has melted, add the onions and allow to cook until translucent and caramelized, about 15 minutes. Add the garlic and cook for 5 minutes. Now, add the bacon pieces, vinegar, and cranberries cook together for 15 minutes. As the cranberries begin to soften and pop, stir and smash the cranberries into mixture.
  3. Add the light brown sugar and cranberry juice and cook for 10 minutes until the mixture thickens. Finally, stir in the dried cranberries and remove from heat.
  4. Toast baguette slices in oven on 325 degrees for 5 minutes on each side. Remove from oven and allow to cool.
  5. Assemble by spreading the baguette slices with goat cheese, spoon a tablespoon of the bacon mixture on top of the goat cheese. Top with pecan pieces and parsley.

4oz garlic and herb goat cheese

2 tablespoons fresh chives

1 (16-oz) jar roasted red peppers

6 tablespoons fruity extra-virgin olive oil, divided

3/4 teaspoon kosher salt, divided

2 tablespoons balsamic vinegar

1/4 teaspoon red pepper flakes (optional)

1. Preheat oven to 375 degrees F. Set goat cheese aside to bring to room temperature. Finely chop chives drain roasted red pepper and finely chop. Slice bread into 1/2 inch thick slices, then tightly arrange on baking sheet drizzle with 4 tablespoons oil and sprinkle with 1/2 teaspoon each salt and pepper. Bake 8-9 minutes until golden and crisp. Remove bread from oven let stand to cool.

2. Combine in medium bowl: roasted peppers, remaining 2 tablespoons oil, vinegar, chives, red pepper, remaining 1/4 teaspoon each salt and pepper. Spread goat cheese on baked crostini and top with red pepper relish and chopped Candied Bacon. Serve.

1. Preheat oven to 325 degrees F. Line baking sheet with foil arrange bacon slices in single layer.

2. Combine sugar and pepper in small bowl coat bacon with sugar mixture (wash hands). Bake 20-25 minutes or until crispy and caramelized. IMPORTANT: Bacon will be very hot! Let stand 5 minutes to cool before serving.
