is a recipe taken from the PASCU DIKA blog, it is a Swedish potato recipe ..... similar to flavored potatoes

Preparation time: less than 60 minutes


Peel the potatoes well. Place in a spoon and cut 3 mm thick slices but not to the end. Place the potatoes in a tray, place the pieces of butter on top of them and sprinkle with olive oil and coarse salt. Bake for 50 minutes. at 220C

Preparation for Hasselback potatoes

Cut each potato vertically, at intervals as small as 5 mm, but not completely, but only up to 5 mm from the bottom. Let it soak for 1 hour, in cold water, with ice cubes and a little lemon juice, to remove as much of the starch as possible, and to dissolve it nicely. Preheat the oven to medium.

Line a baking tray with parchment paper. Place the potatoes on the tray. Sprinkle with olive oil, salt well and pepper and punctuate with pieces of butter. Place the rosemary pieces and the garlic cloves among them.

Cover with aluminum foil and transfer the tray to the hot oven. Bake the potatoes for 30-40 minutes, or until soft. During this time they return at least once. Remove the foil and let the potatoes brown for 5-6 minutes.

Meanwhile, prepare a sauce by mixing a cream cheese with salt, pepper and part of the chopped parsley.

Serve the hot potatoes, sprinkled with melted butter from the pan, sprinkled with cheese and chopped parsley, along with the cheese sauce.

Choose potatoes of the same size, with an elongated shape. Do not peel them, just wash them carefully.

When cutting the potatoes, place them between two thin chopped bottoms, 5-7 mm thick. The potatoes will stay fixed, and the bottoms will not allow your knife to cut more than it should.

Hasselback potatoes they can be cooked in the oven, on the grill or in a pan, fried in butter infused with flavors. Experiment as your imagination takes you.

Also, combine them with other ingredients: fried and chopped bacon, composite butter, mayonnaise, alioli, pesto, etc.

Hasselback potatoes

- Heat the oven to 220 degrees c.
- Wash the potatoes very well (without peeling them) and then wipe with absorbent napkins.
- Cut each potato into very thin slices, about 3/4 of the surface (so that the part to be placed in the tray remains intact).

- Melt the butter in the microwave. Melt the butter in a bowl with the oil.
- Brush with this mixture the surface of each potato and the portions between their slices (previously cut). A pastry brush with very thin threads is useful for this working time.
- Season the potatoes prepared with salt and a mixture of white, green, black pepper and paprika.

- The prepared potatoes are placed in a tray lined with oil.
- Bake the potatoes in the hot oven for 50-60 minutes. They are delicious (slightly crunchy on the surface and soft on the inside).
The most suitable potatoes for this recipe are those of medium size (except the small or very large ones).

Hasselback potatoes (microwave or regular oven)

Peel the potatoes, if they are large, cut them in half lengthwise, if they are medium, just place them between 2 sticks / chopsticks or even tails of wooden spoons and cut transversely without growing them to the bottom (this is the purpose of the wood from the parts do not drop the knife too deep).

The cuts are made at 2-4 mm from each other .. and the potatoes are placed in the tray (dc they are made in a regular cooker) or in the special bowl (dc they are made in the microwave) .. they are greased with melted butter or clarified butter ( ghee).

Bake in the oven for about 45 minutes or 1 hour (or as needed depending on the amount of potatoes) and grease with oil every 10-15 minutes ... if baking in the microwave for 8 medium potatoes it takes 10 minutes. when they are cooked inside (test with a toothpick) put the breadcrumbs and grated cheese (or cheese) on them and bake on the grill for 10-15 minutes (in the case of the microwave grill only 5 minutes). or until they have crusted.

They serve vegetarian food coffee, hot appetizer or as a side dish

Marinated legs in basil with mayonnaise, with hasselback potatoes

We wash the thighs.
Season them well with salt and pepper.
Grease them with half the amount of mayonnaise and put them in the fridge for 24 hours.
The next day we take them out and grease them again with a mixture prepared from the remaining mayonnaise plus a teaspoon of basil.

We place them in a tray. We pretend to have lost between them 3 cloves of lightly crushed garlic and cover them with baking paper greased with oil
Put them in the preheated oven at 200 degrees for 10 minutes.
Then reduce to a temperature of 175 degrees and leave them for another 40 minutes after which we take the paper and let them brown nicely.

I also put the potatoes in the same tray. Wash, clean and slice (we don't totally & # 8220fell & # 8221 with the knife but not so much that we cut them completely but we have to get an accordion look, it can be seen in the pictures).

From butter, basil, salt, pepper and crushed garlic I made a mixture with which I greased the potatoes well.
I put them next to the pulpits and they had the same fate & # dear :)))
