Spaghetti squash varies greatly in terms of wetness. You’ll really want to squeeze out as much liquid as possible so your fritters fry up crisp, not soggy.

Ingredients

Yogurt Sauce

  • ½ English hothouse cucumber, grated
  • ½ teaspoon finely grated lime zest
  • 1 tablespoon fresh lime juice
  • 1 teaspoon brown mustard seeds

Fritters

  • 1 medium spaghetti squash (about 3 pounds)
  • 1 large egg, beaten to blend
  • ¼ teaspoon cayenne pepper
  • Vegetable oil (for frying; about 3 cups)
  • Flaky sea salt (such as Maldon)

Recipe Preparation

Yogurt Sauce

  • Mix cucumber, yogurt, lime zest, lime juice, and mustard seeds in a small bowl; season with salt.

Fritters

  • Preheat oven to 375°. Pierce squash all over with a knife to vent. Roast on a rimmed baking sheet, turning every 20 minutes, until tender (knife will easily slide through), 60–90 minutes.

  • Let cool slightly. Halve lengthwise and scoop out seeds; discard. Scrape flesh with a fork to remove in long strands. Using a clean kitchen towel, wring out excess liquid from squash.

  • Mix squash, onion, egg, chickpea flour, curry powder, kosher salt, and cayenne in a medium bowl.

  • Pour oil into a large skillet, preferably cast iron skillet, to a depth of ½" and heat over medium-high until oil bubbles immediately when a bit of squash mixture is added. Working in batches, scoop heaping tablespoons of squash mixture into skillet, pressing down with a spatula to flatten. Cook until golden brown, about 3 minutes per side. Transfer to paper towles to drain; sprinkle with sea salt.

  • Serve fritters with yogurt sauce alongside for dipping.

Spaghetti Squash Cakes

Winter squash is more versatile than it appears at first glance. Though roasting is my preferred method of preparation, the uses are endless. Add pureed squash to muffin batter, pancake batter, soups, and casseroles for volume, fiber and vitamins.

Today I’ve taken spaghetti squash and redefined it’s use. Traditionally, these unique vegetables are sliced open, de-seeded, and baked in the oven to soften. The strands are taken out with a fork and eaten as you would traditional spaghetti– a lower-carbohydrate, high-fiber alternative to its traditional counterpart. I’ve transformed this seasonal veggie into fritters to amp the protein content. These are super fun to have in the cold winter months and would go great with a savory yogurt sauce or as a side to a heartier winter meal.

Spaghetti squash: Spaghetti squash will is a great pasta substitute because it creates a similar texture while providing ample fiber and antioxidants (it is a vegetable after all). It is also rich in B vitamins which support metabolism and potassium which helps maintain proper nerve and muscle function.

Basil: Vitamin K is a standout in this leafy green. Beyond blood clotting, vitamin K is recognized for its role in maintaining bone health and keeping arteries free from calcification. K2 from fermented and animal-based foods is primarily regarded for these effects but K1 from plant-based foods need not be discounted.

This helps to release the moisture during cooking. Bake in the preheated oven until squash is tender, about 30 minutes. Shred the inside of squash with a fork and transfer to a bowl. Use freely in your favorite recipes.
