In general, I do it quite often, but it all depends on the season, in summer I do it with tomatoes and in winter with cream. Well I admit and in the summer I sometimes do it with cream :))))
But let's see what we need and what it's about, but I assure you of the wonderful taste of this soup.

Ingredients green bean soup with smoked sausages and cream

  • An onion
  • 150 g carrots
  • 100 g celery root
  • 100 g red bell peppers
  • 3-4 cloves of garlic
  • 50 ml of sunflower oil
  • 500 g yellow-green beans
  • 300 g smoked sausages
  • 1 hot pepper plus juice from them (Optional)
  • 350 g cream with a minimum of 32% fat
  • 3 yolks
  • 1 bunch of dill
  • 1 tablespoon fresh thyme leaves or 1 teaspoon grated dry
  • Salt and pepper to taste

How to prepare green bean soup with smoked sausages and cream:

We clean all the vegetables, except for the green beans, we cut them into cubes and we put them to harden with oil and salt.

After 5 minutes add the sausage cut into slices of half a centimeter, sauté for 2-3 minutes on low heat

and add 1.5 l of water and cook for about 20 minutes or as long as necessary, so that the sausage is cooked (depending on the sausage)

Add green beans, thyme, pepper, hot pepper vinegar (to taste), salt and cook for 8-10 minutes.

Meanwhile, prepare the lychee: mix the yolks with the cream and after the beans have boiled, take as much of the soup as possible and put it in the cream mixture, in order to bring the lychee as close as possible to the temperature in the pot. Pour back into the pot and stir for 3-4 minutes continuously.

  1. Dice onions, carrots and celery. In a large pot, three-quarters full of water, add the chopped vegetables and bring to a boil.
  2. Meanwhile, wash the salad well, leaf by leaf. They may have traces of dirt or even insects.
  3. When the water in which you put the vegetables has boiled, add the lettuce leaves, breaking them by hand.
  4. Wait for it to boil again, let it boil a little more, then add the lemon juice and salt and pepper to taste.
  5. Take the pot off the heat and serve the soup warm. Optionally, you can serve it with a tablespoon of cream or yogurt.
