Omelette with ham, peas and feta cheese

a handful of mint, finely chopped
50g of frozen, thawed peas
100g of fried ham, cut into cubes
4 eggs, beaten
1 tablespoon olive oil
100gr feta cheese, broken into pieces
ketchup (optional)

Method of preparation

In a large bowl mix the beaten eggs, chopped mint leaves, peas and ham cubes. Season with salt and pepper.

Heat the oil in a pan, add the egg mixture and with a spatula, push the eggs from the outer edges inwards, to cook easier.

Add the pieces of feta and cook for 2-4 minutes.

Heat the oven, grill function.

Put the pan in the oven, under the grill and cook for 3-4 minutes, until the top is browned.


Beat eggs at room temperature with a little milk and a pinch of fresh pepper and a pinch of salt. Milk helps to make a fluffier omelet. Chop the dill and mix with the egg. Grate the minced cheese and cut the pepper into cubes or strips. Mix everything. Put 2 tablespoons of oil in the pan and grease the pan well. Place the composition, tilt it slightly to the shape of the pan and even out with a spatula.

We cut the ham into triangles and decorate the omelette. Any other ornamental combination can be made. Put the pan in the preheated oven for 15 minutes (you need a pan with a metal handle or removable). Cut the leeks into rounds and give them a pinch of salt. Allow 5 minutes for the salt to take effect and pick up its speed, making it sweeter. Mix with fresh parsley and a drop of olive oil.

Remove the omelette, place it on a flat plate and garnish with leeks and parsley. If you want to use more vegetables in the composition, it is good to harden them a little beforehand and then put the beaten egg in them in the pan, then put them in the oven.

Mexican omelette (Mexican omelette)

Today we offer you a quick, filling and full of Mexican flavor breakfast. Inspired by Spanish cuisine, the recipe below was adopted by Mexicans a long time ago, and is now served in both large hotels and regular bars. This breakfast consists of a special omelette with vegetables, ham and many spices.


Ingredients (6 servings):

- 2 tablespoons of sunflower oil
- 6 medium / large diced potatoes
- 200 g diced turkey ham
- 8 egg whites
- 2 whole eggs
- a finely chopped medium onion
- 100 g diced cheese (optional!)
- 1/2 cup skim milk
- a finely chopped red pepper
- oregano, salt, pepper, coriander

Method of preparation:

- heat a non-stick pan over medium heat, add the oil and then, when hot, cut the diced potatoes
- fry the potatoes until golden
- add onion and ham and leave them for another 2-3 minutes, until the onion becomes transparent and the ham is crispy
- add the red pepper and mix well
- in a separate bowl mix the egg whites, whole eggs, cheese (grated or diced), salt, pepper and oregano
- the mixture of potatoes, ham, onion and pepper is carefully poured into the egg bowl and mix well
- this composition is put back in the non-stick pan and fry the omelette until golden
- return and leave for another 2-3 minutes
- This Mexican Frittata can be cooked in the oven for 10 minutes, until the cheese melts

- Frittata is cut into slices and served with lean sauce and fresh parsley, hot or cold
